Veggie This Way


Okay, so ...
It's not a gourmet sandwich, but it's definitely a step up from takeout.


I bought fresh French bread to make my sandwich, and because it was nice and fresh, I did  absolutely nothing except spread mustard on it.

What kind of mustard? Um, the only mustard a 100% Buffalonian should use,


Had the bread been a day or two old, I'd have brushed the inside with oil and lightly fried it in a pan.
Or spread some garlic butter on it and popped it in the toaster oven.
I think there's just something criminal in messing with fresh out of the oven bakery bread.

SPICY BLACK BEAN BURGER


I didn't take a picture of the actual burgers while I was cooking them, because my phone was charging. They were in my freezer, so I microwaved them for 45 seconds and then popped them into my toaster oven. I cooked two, they come 4 in a package. I set the oven to 350 and the timer for 10 minutes. I didn't wait for it to come to temp, so it wasn't at a consistent 350. Some toaster ovens get hotter than others, so temps and times will vary. I could've just put them in the toaster without microwaving them, but I was really hungry because I skipped both breakfast and lunch. And you don't want to be around a hangry Asian.

Other methods to cook these? Some people fry them, others bake them in the oven. If you are frying, I suggest that you put in a little water, which will help the burger defrost, and prevent it from drying out. When the water evaporates, and you want that extra crunch, brush both sides with oil (I use EVOO) and fry on each side. Again, to prevent it from drying out, only fry each side for a few seconds. I only bake them in the oven if I'm making more than 4, for company. When I do use the oven, I do put some water in the baking sheet. I do not submerge them, it's just enough to help build up steam in the oven.

If you're using a toaster oven, I spray some water in it to help build up steam around the 2-3 minute mark, and then I flip the burger halfway through. I didn't flip them halfway today. At the end, I put cheese on top to melt. I had Swiss on-hand, but use whatever you prefer. I turned on the broiler to melt the cheese and removed when it started to bubble and brown.

The burgers aren't as juicy as one made with meat, which is why I either put mayo, mustard, combination of both, or a mixed green salad with vinaigrette on my sandwich.

I really like MorningStar's spicy black bean burgers, but I've also used their "chicken" patties, plain veggie burgers and a few other flavors. I did not like their Indian veggie burgers. I just felt like the spices were too overwhelming.

I'm not a vegetarian but I do enjoy vegetarian foods.

Summer Sausage Stuffed Peppers You can use hot or sweet peppers for this recipe.  I ended up going with sweet peppers but added extra spice to my filling for a little zing. These peppers can be kept whole, sliced with a slit in the middle and stuffed, or cut in half and filled like veggie boats. You can cook the meat ahead of time but I did not. So, I had definitely planned on making both Julia and Jacques' mayonnaise recipes first, but after going out and buying all of the ingredients, getting stuck behind a customer that wasn't understanding something and held up the line for 5 minutes, dealing with a rude cashier, having to go to another store because the first store didn't have some of the ingredients I needed, waiting in line at that store for 10 minutes because they only had one cashier, and last but not least, having some old lady steal my pull-through! I decided I'd tackle one of the vegan recipes I found, because after everything that happened, I just needed something simple and easy to make.
