So, I had definitely planned on making both Julia and Jacques' mayonnaise recipes first, but after going out and buying all of the ingredients, getting stuck behind a customer that wasn't understanding something and held up the line for 5 minutes, dealing with a rude cashier, having to go to another store because the first store didn't have some of the ingredients I needed, waiting in line at that store for 10 minutes because they only had one cashier, and last but not least, having some old lady steal my pull-through! I decided I'd tackle one of the vegan recipes I found, because after everything that happened, I just needed something simple and easy to make.
First one up!
1 cup whole raw cashews
(Soaked overnight)
(Soaked overnight)
1 tsp fresh lemon juice
1 tsp distilled white vinegar
1/2 tsp nutritional yeast
1/4 tsp Dijon mustard
3/4 tsp salt
1/4 - 1/3 cups cold water
- Drain your soaked Cashews, if they are still in liquid. Add the Cashews, Lemon Juice, Vinegar, Nutritional Yeast, Dijon Mustard, and Salt to a high-speed blender.
- Add 1/4 cup of Filtered Water if you are using the Cashew Mayo immediately in a recipe
- Add 1/3 cup of Filtered Water if you are planning on using the Mayo over time (ex: Sandwiches)
- Blend all ingredients together for 60 seconds, then transfer to a glass jar or sealable container.
- Store in the fridge for up to 10 days
I used my mini blender, because my large blender broke, and every time I go out to the store to buy one, I get everything but a blender.
For the cashews, I used a 1 cup and a 1/2, instead of a cup.
I added a 1/3 cup of water instead of 1/4, because I wasn't using it right away.
I added a little more Dijon mustard than the recipe called for. It wasn't done on purpose. I was using a squeeze bottle, and went a little Hulk on it.
I was a little worried because I've had this bullet for a few years now, and I wasn't sure if the blades would be sharp enough to get through an entire cup of cashews. Also slightly nervous that it would blow the motor. Everything ended up being fine. I'm one of those worst case scenario people.
I did stop and shake the container a few times, just to make sure that everything was getting blended. When I was done, I could smell a little bit of smoke coming from the motor but nothing serious. I did a pinkie test, because if I didn't like it, I was just going to dump it.
It's much thicker than mayonnaise, but thinner than hummus.
I did add more cashews, but I don't think the extra 1/2 would've made that much of a difference in it's consistency.
I blended it longer than 60 seconds, because my bullet motor is a lot less powerful.
You can obviously taste the cashews and the Dijon mustard as well. I've never had anything made with blended cashews or nutritional yeast, so I wasn't sure if I'd enjoy it or not. But it has a very pleasant taste and I really like it.
So if you're looking for a simple mayo substitute, I highly recommend this recipe!
